Mince chicken kabab

mince chicken kabab


Ingredients :
  • Chicken : 500 gm mince
  • Fried onion / beresta : 1 cup
  • Ginger paste : 1 tsp
  • Garlic paste : 1 tsp
  • Turmeric powder: 1/2 tsp
  • Salt to taste
  • Cumin powder : 1 tsp
  • Coriander powder : 1 tsp
  • Kashmiri red chili powder : 1 tsp
  • Bread crumbs: 1 cup
  • Coriander leaves : handful finely chopped 
  • Garam masala powder : 1 tsp
 
Procedure :

1.In a bowl take all the ingredients except oil. Give everything a good mix.If the mixture feels too sticky 
you can add 1-2 tbsp of breadcrumbs.Now take a 
frying pan , heat oil.In mean time shape the kababs 
into flat discs and shallow fry them until golden brown 
on both sides.  You can dip them in egg ,and roll them 
in a bed of breadcrumbs before frying if you want.
Take them out and put them in a serving dish.

 Serve them hot with salads, sauce or chutney

Oats cheela/Oats Pancake

 

Oats cheela/Oats pancake 

Ingredients :

  • Oats : 1 cup
  • Sattu : 2 tbsp ( optional )
  • Water : 1 cup
  • Egg : 1
  • Carrots : 1/2 cup grated
  • Capsicum: 1/4 th cup finely chopped 
  • Onion: 1/4 th cup finely chopped 
  • Coriander leaves: 1 tbsp finely chopped 
  • Green chilies: 2 finely chopped 
  • Salt to taste
  • Olive oil :2 tbsp
Procedure:

1) First take a kadai and dry roast the oats and then keep it in a mixing bowl.

2) Add a cup of water to oats and let it soak for 10 minutes.

3) Meanwhile chop all the vegetables.

4) Now with the help of hand smash that soaked oats.Now add all the ingredients to it. And mix them well.If required add more water to make the desired consistency. It will be medium consistency (not too thick neither too liquid).

5) Now take a frying pan .Add few drops of oil and spread it with a brush. Pour 2 tbsp of batter and spread it like a pancake or cheela and cook in low heat.Cover it with a lid and wait for 2-3minutes. Now now remove the lid and turn the pancake and cover and cook the other side for another 2-3 minutes.

6) In this way turn by turn make the cheelas. Outer layer will be crispy and inside it will be soft.

Serve the hot Oats cheela with ketchup.

Chili Fish

Chili Fish


Ingredients:

  • Basa fish fillet : 500 gm ( You can use any
           Other fish) cut into medium size cubes
  • Ginger paste : 1/2 tbsp
  • Garlic : (1 tsp Paste & 2 tbsp finely chopped)
  • Soya sauce : 1 + 2 tbsp
  • Red chili sauce: (1+2 tbsp)
  • Tomato ketchup : (2+2 tbsp)
  • Chings szechuan Sauce : (1+1tbsp)
  • Chili vinegar: 1&1/2 tbsp
  • Cornflour : 2 tbsp
  • Honey : 1 tbsp
  • Green chilli : 5-6 cut length wise
  • Onion :  1 cup cut in large cubes
  • Capsicum: 1 cup cut in large cubes
  • Egg : 1
  • Soyabean oil / any other white oil : 1 cup
  • Spring onion : 1 tbsp ( green leaves) finely chopped 

Procedure :
      1)  Take a mixing bowl and put fish , egg,1/2 tbsp
           ginger paste,1 tsp garlic paste, 1 tbsp soya sauce,
           1 tbsp red chili sauce, 2 tbsp tomato ketchup,
           szechuan sauce 1 tbsp and chili vinegar 1 tbsp.
           Mix them well and keep it aside for atleast an
           hour.
     2)  Take another bowl and take out fish from the
           marinated sauce and put it in the 2nd bowl and
           add 2 tbsp corn flour.Mix it well. And keep the
           marinated sauce aside for further use.
     3)  Now heat a frying pan. Add a cup of oil.Wait till
           oil becomes hot. Add fish pieces one by one ,
           spread it so that they don’t stick with one
          another. Fry them in medium heat. Fry them in
          batches. Take them out and keep it aside.
     4)  Now a non-stick  pan or a kadai . Add 2 -3 tbsp
          oil. You can use the frying oil.Heat it. Add
          chopped garlic. Fry till garlic’s colour changes
          to golden brown.
     5)  Then add green chilies. Fry it and then add
          chopped onion and chopped capsicum. I use
          green bell pepper. You can use other colour
          bell peppers.Fry it till they are almost soft.
     6)  Now add all sauces(tomato ketchup 2 tbsp,
          red chili sauce 2 tbsp, szcheuan sauce 1 tbsp)
         and 1/2 tbsp vinegar.Mix them well and cook
         for 2 minutes. Cook in medium heat.
     7)  Add marinated sauce , mix them well and
          cook for another 3-4 minutes. Add honey ,
          mix them well and cook for a minute.
     8)  Finally add fried fish . Mix them gently with
          gravy.Cook for few more minutes .Add a tbsp
         of finely chopped spring onion. I didn’t add
         spring onion as I don’t have it. Turn off the
         heat. Pour it in a serving dish.
          Our Chili Fish is done.


          Serve it hot. You can have it with fried rice.

Chicken Shami kabab

Ingredients :

  • Ground chicken : 500 gm
  • Cilantro leaves : 1 tbsp chopped
  • Garlic paste : 1 tsp
  • Ginger paste : 1 tsp
  • Green chilies : 2-3 chopped
  • Salt to taste
  • Onion : 1 small finely chopped
  • Chickpea lentils/channa daal : 4 tbsp (soaked for at least 4 hours)
  • Potato : 1 medium peeled and cubed
  • Besan : 1 tbsp
  • Cumin powder : 1tsp
  • Turmeric powder : 1/4 tsp
  • Lemon juice : 1/2 tbsp
  • Egg: 1 lightly beaten
  • Garam masala powder : 1/2 tsp
  • Vegetable oil : 2 tbsp

Procedure:

1)  In a frying pan put the chicken with all soaked dal,
     onions and potatoes. Add half a cup of water and
     cook in medium heat until the chicken is cooked
     and the rest of the ingredients (dal/potatoes/onion)
     are all soft. Increase the heat and dry off any excess
     moisture.
2)  Allow this mixture to cool completely.  Then
     grind the mixture until smooth. Pour it in a
     bowl and add besan and half of the beaten egg.
3)  Add the garam masala, salt,lemon juice,ginger
      -garlic paste , green chilies ,cumin powder,
     turmeric powder and chopped coriander.
     Give everything a good mix.If the mixture feels
     dry, you can slowly add the rest of the egg one
     teaspoon at a time and mix. Or if it feels too sticky,
     you can add 1-2 tbsp of breadcrumbs.
4)  Now take a frying pan , heat oil.In mean time shape
     the kababs into flat discs and deep fry them until
     golden brown on both sides.  You can dip them in
     egg before frying if you want, but I prefer my kababs
     to be crispy so I didn’t  dip them in egg.
     Take them out and put them in a serving dish.

      Serve hot with salads.

Kumro r Fry


Preparation Time : 1/2 hour
Cooking Time : 10 minutes

Ingredients :
  • Kumro /Pumpkin :2 cups cut into thin slices.
  • Posto / poppy seeds : 1/2 tsp
  • Kalo jeera : 1/2 tsp
  • Salt to taste
  • Sugar
  • Red chili powder : 1/2 tsp
  • Turmeric powder : pinch
  • Yellow Split peas/Matar dal :  1 cup paste
  • Vegetable oil : 1cup


Procedure :
1) Soak matar dal in water over night. Then make a fine smooth paste and keep
    aside.
2) Cut pumpkin into very thin slices.
3) Take a bowl and put dal paste,poppy seeds,kalo jeera ,salt,turmeric powder,
     red chili powder and sugar. And mix them well with hand for atleast 3-4
     minutes. Make a thick batter.
4) In a frying pan heat 1 cup of vegetable oil .Make it really hot.
5) Now dip pumpkin slices in dal batter. And then put it in hot oil very smoothly.
    Fry them on both sides till the dal coating becomes golden in colour and also
   crispy. Take out of oil and put it in a paper napkin to drain out excess oil. Fry
   them in batches.

Serve them hot.

Bread Upma

Preparation time :5 minutes
Cooking Time : 10 minutes
Serves : 2

Ingredients :

  • Bread : 4 slices cut into very small cubes
  • Onion : 1/4 cup finely chopped
  • Green Chilies : 2 chopped
  • Curry leaves: 3-4
  • Red bell pepper : 2-3 tbsp finely chopped
  • Tomato : 2-3 tbsp Chopped
  • Black mustard : 1/8 tsp
  • Cumin seeds : 1/8 tsp
  • Tomato ketchup : 1 tbsp
  • Salt to taste
  • Olive oil : 1tbsp


Procedure :

1) First cut bread slices into small cubes and put it in a 
    bowl .Sprinkle 1 -2 tbsp of water over it.
2) In a pan add oil and heat it.
3) Then temper it with cumin seeds and mustard seeds.
     Wait for few seconds.
4) Add chopped onion ,green chilies and curry leaves.
    Saute for a minute in medium-high heat.
5) Now add other vegetables. You can add any 
    vegetables of your choice.Add salt.
6) Stir it for 4-5 minutes in medium heat till all 
    vegetables becomes soft.
7) Add ketchup and mix it with vegetables.
8) Add cube bread pieces and mix them well with
    vegetables. Cook for 2 minutes.Turn off the heat.

    Serve hot with tea.

Bread Pizza

Preparation Time : 5 minutes
Cooking Time : 15-20 minutes

Ingredients :

  • Bread : 4 slices
  • Butter : 1 tbsp (optional)
  • Chicken : left over 4 medium pieces
  • Onion : 1 small chopped
  • Green chilies : 1 (optional)
  • Capsicum : 2 tbsp chopped
  • Red capsicum : 2 tbsp chopped (optional)
  • Salt to taste
  • Tomato ketcup : 1 tbsp
  • Cheese slices : 4
  • Cheese : 1 cup grated
  • Vegetable oil: 1 tbsp


Procedure :

1) If you have left over chicken pieces then chopped them into very small pieces.You
     can also use fresh chicken.
2) In a kadai / pan add 1 tbsp oil ,heat it.Then add all vegetables and chopped meat
     and mix them well.
3) Sprinkle salt ,mix well.
4) Add tomato ketchup and mix them well.Cook them until all vegetable becomes soft.
    Turn off the heat .
5) Now put sliced bread on a baking tray . Spread each of the bread with butter.
6) Put one slice of cheese on each bread. You can also avoid this step.
7) Now top  the cooked vegetables and meat on the bread slices.
8) Now over the vegetables and meat put grated cheese as per your taste.
9) Preheat the oven and put the tray in the oven and bake it at 250 degree farenhit for
    8-10 minutes.

    Serve with chili flakes or hot ketchup. Enjoy .

Fish chop

Preparation Time : 30 minutes -1 hour
Cooking Time : 10 minutes
Serves  : 4-5

Ingredients:

  • Tuna fish : 1 can
  • Potato : 1 large boiled
  • Onion : 1/2 cup finely chopped
  • Garlic : 3-4 chopped/ crushed
  • Ginger : 1/2 tsp
  • Cumin powder :1/2 tsp
  • Coriander powder: 1/4 tsp
  • Salt to taste
  • Green chilies : 3 chopped
  • Bread crumb : 1 cup
  • Egg : 1
  • Garam masala powder : 1/2 tsp
  • Kashmiri red chili powder : 1/2 tsp
  • Sugar :1/2 tsp
  • Cilantro : 1 tbsp finely chopped
  • Vegetable oil for deep frying

Procedure :

1) Drain water from caned tuna and keep it aside.
2) In a kadai add 2 tbsp oil ,heat it.Then add finely chopped onion , crushed garlic
    and chopped green chilies.Fry it for 1-2 minutes.
3) Now add ginger paste,cumin powder,coriander powder,kashmiri red chili
     powder and very little  salt as caned fish contains salt .Mix them together and
     fry for 3-4 minutes.
4) Now add fish and smashed potato .mix them very well with fried masala.Cook
     for 5-7 minutes in medium-high heat .
5) Add little sugar ,chopped cilantro,garam masala powder .Stir them well and
    cook for another 2-3 minutes.Adjust the salt.
6) Cook till all the masala and fish mixed properly.Keep them in a plate. Let
     it cool down and keep it in a refrigerator for atleast an hour.
7) Take a small portion of mixture and give it shape(round ,flat like patties or
     cylindrical) and keep aside.
8)  Now take a bowl and beat an egg with pinch of salt.
9) Take some bread crumb in a flat plate.
10) Dip chop in egg and then roll it in crumb.
11) Then deep fry it in medium flame till chop becomes crispy and its colour
      changes to golden brown. Take them out from oil and put it over a kitchen
      paper napkin to soak the excess oil.
   
       Serve hot with salads and ketchup.

Koraishutir Kochuri / Green Peas Kachori

Preparation Time : 20-25 minutes
Cooking Time : 20-25 minutes

Ingredients :

  • Koraishuti / green peas : 1 cup frozen or fresh
  • Green chilies : 1-2 
  • Ginger : 1/4 tsp
  • Ajwain : 1/4 tsp
  • Hing /Asafoetida : pinch
  • Salt to taste
  • All purpose flour : 2 cup
  • Vegetable oil : 2-3 tbsp
  • Sugar : 1 tsp
  • Oil for deep frying 


Procedure :

1) If you are using frozen green peas,then defrost them.
    Then make a fine paste of green peas, ginger and 
     green chilies with very little water.
2) Now in a frying pan heat 1 tbsp of oil then add 
    ajwain and hing ,wait for few seconds.Add the 
    smooth paste of green peas and little sugar if peas
    are not sweet,fry it till water from paste evaporates 
    and the mixture becomes dry.Now the stuffing is 
    ready and keep it aside and let it cool down.
3) In a large bowl take flour ,salt ,sugar and 2 -3 tbsp 
    oil.Mix them well.Now firstly add 1/2 cup of water
    and make a dough .If reqiued add little more water   
    gradually till dough is soft.Now cover the dough 
    with a damp cloth and keep it for 10-15 minutes.
4) Now take a small portion of dough in hand and 
    make a round ball.Then make a small disc by 
    pressing it with your palm and put a small ball (
    1 tsp) of stuff in the center of disc.Now bring all 
    sides together and cover the opening. Keep them 
    aside for 10 minutes.Cover it with a wet kitchen 
    towel.
5) Now roll out by applying oil on both sides. Roll 
     it gently. Put the joint side in bottom.
6) Take oil for deep frying in kadai or frying pan
     and heat it. Deep fry the  kochuri.

    Serve hot kochuries with potato curry or chana dal.

Crab Puff

Preparation Time : 30 minutes
Cooking Time : 5-10 minutes

Ingredients :
  • Crab meat : 1/2 cup finely chopped
  • Cream-cheese : 4 tbsp
  • Soya sauce : 1 tsp
  • Sugar : 1 tsp
  • Green onion : 1 tbsp finely chopped
  • Wonton wrappers : 20
  • Vegetable oil for deep frying


Procedure :

1) Take a bowl and put chopped crab meat,cream cheese,soya sauce,sugar
     and green onion.Mix them well. Keep it for 1 hour if you have time
     otherwise you can immediately use it .
2) Now lay one wonton wrappers on your palm and place a tsp of filling in
    the center of the wrapper.Moisten the middle edges with wet finger tip.
    Now seal by pushing four edges towards the center to create a star.keep
    it in a plate and repeat the process .
3) Heat oil in a frying pan and fry the puff until crisp and golden brown.Use
    cooking tong for frying crab puffs.
 
Serve hot with sweet and chili sauce.

Beguni / Batter fried Eggplants

Preparation time : 10 minutes
Cooking Time : 15-20 minutes
Serves : 5-6

Ingredients :

  • Eggplant : 1 medium cut into very thin slices length wise or round wise
  • Besan : 4 tbsp
  • Rice flour/ Corn flour : 1and 1/2 tbsp
  • Nigella /Kalonji / kalo jeera : 1/2 tsp
  • Salt to taste
  • Sugar : 1/2 tsp
  • Turmeric powder : 1/8 tsp
  • Water : 1/2 cup
  • Red chilii powder : 1/4 tsp
  • Cumin powder : 1/8 tsp
  • Vegetable oil for deep frying


Procedure:

1) Wash and clean egplant.Cut into thin slices and keep it aside.
2) In a deep bowl take besan,rice flour or corn flour,kalonji,salt,sugar,
    red chili powder,cumin powder,turmeric powder and pour water.
3) Make a thick batter.Do not add all water one at a time .Check its
    consistency and then add water.
4) Now heat oil in a frying pan .
5) Take one eggplant/ brinjal slice and dip it in batter to coat  both sides
    of it . Slowly release the coated eggplant in the hot oil.
6) Keep medium heat and fry till both sides are golden brown and crisp.
     Take out and put them on kitchen paper to soak excess oil.

     Serve hot with hot tea.

Bengali Style Fish Fry

Preparation time : 2 hours
Cooking time : 10-12 minutes
Serves : 7-8

Ingredients:
  • Fish : Bhetki / telapia fillet 2 cut into small pieces
  • Onion paste : 1/4 cup
  • Ginger paste : 1/2 tbsp
  • Garlic paste : 1/2 tbsp
  • Lemon juice : 1-2 tbsp
  • Salt to taste
  • Green chilies : 1-2 paste 
  • Cumin powder : 1 tsp
  • Corriander powder : 1 tsp
  • Garam masala powder : 1/2 tsp
  • Egg : 2 beaten
  • Bread crump : 1 cup
  • Vegetable oil  to deep fry



Procedure :

1) Make a fine paste of onion,ginger, garlic and green chilies in a
     blender.
2) Marinate the fish pieces with the onion-ginger -garlic-green chili
     paste,little salt and lemon juice for 15 minutes.
3) Put the marinated pieces in a single layer in a shallow tray.
4) Now again marinated them with corriander powder, cumin powder
    and garam masala powder.Nicely coat all the pieces and keep it
    covered for atleast 1 hour.
5) Take out each fish pieces from marinated spices and drain out
     excess water.
6) Take a small bowl. Beat 2 whole egg with pinch of salt.
7) Take a plate and spread bread crump.
8) Now take one fish piece ,roll it in bread crump ,then dip it in
     beaten egg, take out and again roll in bread crump.keep aside.
9) Now in a frying pan heat sufficient oil for deep frying.
10) Now gently slide the fish pieces coated with egg and bread
     crump in hot oil. Fry it in medium heat till its colour become
     golden brown.

    Serve hot with salads and ketchup.

Cooking Time : 15-20 minutes
Serves : 6-7

Ingredients :


  • Chicken : lollypop pieces 14-15
  • Ginger paste : 1 tbsp
  • Garlic paste : 1 tsp
  • Soya sauce : 1 tbsp
  • Salt to taste
  • Black pepper powder : 1/4 tsp
  • Crushed ginger : 1 tsp
  • Crushed garlic: 1 tsp
  • Maida : 2 tbsp
  • Corn flour : 2 tbsp
  • Kashmiri red chili powder : 1 tbsp
  • Red chili powder : 1 tsp
  • Red food colour : 1 drop
  • Egg : 1
  • Vegetable oil to deep fry
  • Sweet chilli sauce


Procedure:

1) Take chicken lollypop pieces, ginger-garlic paste,black pepper powder,
    salt and soy sauce in a bowl and mix well. Marinate for 30 minutes.
2) Heat sufficient oil in a pan .
3) Put crushed ginger and garlic,red chili powder, kashmiri red chili
    powder,red food colour, maida and corn flour in another bowl and
    mix well.Add  water and mix well till a thick batter is formed.
4) Dip marinated lollypops in the batter and deep fry in hot oil in medium
    heat till it becomes crispy. Drain on paper napkin.
 
    Serve hot with sweet chilli sauce.

Masala Sandwich

Preparation Time : 15 minutes
Cooking Time : 10-12 minutes
Serves:2

Ingredients :

  • Bread : 4 slices
  • Potato : 1 large, boiled and smashed
  • Onion : 1/4 cup finely chopped
  • Garlic : 1 clove finely chopped
  • Cumin seeds : 1/2 tsp
  • Green chili: 1 tsp finely chopped
  • Ginger paste : 1/2 tsp
  • Cumin powder : 1/2 tsp
  • Vegetable oil : 1 tbsp
  • Salt to taste
  • Chat masala : pinch
  • Butter : 1tbsp


Procedure :

1) Boil potato and smashed it . Keep aside.
2) In a frying pan heat oil and cumin seeds.Let them splutter.
3) Add onions and chopped garic. Fry the onions till transparent.
4) Add chopped green chili. Add ginger paste,cumin powder and salt.
    Fry it for 2-3 minutes.
5) Add smashed potato.Mix the stuffing very well.cook for 5 minutes.
    Turn off the heat. Let the mixture cool before you start using it for
    the sandwich.Sprinkle chat masala over masala and mix them well.
6) Cut the edges of the bread. Cut the bread in triangular shape.
7) Apply butter evenly on the bread on both sides.
8) Put and spread potato mixture on one bread and cover it with another.
9) In a  sandwich maker, toaster or grill, toast or grill the sandwich till
    browned from both sides.
10) It will become crisp from outside and soft from inside.

    Serve hot.

Aloo Bhaja / Crispy potato fry

Preparation Time : 20-25 minutes
Cooking Time : 15 - 20 minutes
Serves : 6-7

Ingredients :


  • Potato : 2 large 
  • Salt : 1 tsp
  • Vegetable oil for deep frying
  • Black salt: pinch (Optional)


Procedure :

1)  Cut potatoes into thin round slices. You don't need to peel them. Now
     with a very sharp knife cut them into very fine juliennes. . Make sure to
     soak them in water as soon as you cut them other wise its colour will
     change to black.
2) After you are all done with cutting . Strain it in a strainer and wash
    thoroughly.Strain excess water. Add salt and mix them well. Keep it
    aside for 5-10 minutes.
3) Now heat oil in a pan till smokes comes out.Now reduce the heat to
    medium.
4) In hot oil add a handful of potato juliennes at a time and keep it stirring
    continuously with a perforated spoon( in bengali it is known as jhanjri)
    for even cooking to prevent formation of any lumps.Fry them till it
    becomes crispy.
5) Remove from oil with the help of perforated spoon .Drain them on a
    paper towel to remove excess oil.Cool it completedly and keep it in a
    air tight container.

     Sprinkle pinch of black salt over aloo bhaja.
     Serve them with hot steam rice and dal.

Chilli Chicken

Preparation Time :25-30 minutes
Cooking Time : 20-25 minutes
Serve : 4

Ingredients:


  • Boneless chicken breast : 250 gms (cut into 1 inch cubes)
  • Egg : 1
  • Garlic : 4-5 cloves crushed and finely minced
  • Ginger : 1 inch cut into thin julliens
  • Onion : 1 large cut into cubes
  • Green bell pepper : 1/2 cup cut into cubes
  • Green Chillies : 4-5 cut into halfs ,length wise
  • Red chilly sauce : 2-3 tbsp
  • Corn flour : 1-2 tbsp
  • Soy sauce : 2 tbsp
  • Tomato ketchup : 2-3 tbsp
  • White vinegar : 1 tbsp
  • Vegetable oil
  • Green onions/ Spring Onion : 1/2 cup(cut into 1/2 inch length)
  • Salt : 1 tsp


Procedure:

1) Marinate the chicken pieces in egg , 1 tsp salt, 1 tsp red chilly sauce and
    2 -3 tsp cornflour. Mix well and keep for 10 - 15 minutes.
2) In a bowl mix  red chilly sauce, soy sauce, tomato ketchup and  vinegar.
    Keep aside .
3) Now heat oil for frying in a pan/ kadai and fry the chicken pieces separately
    for 4-5 minutes. Do not over fry otherwise the chicken will get hard. Take
    them out on a  paper napkin.
4) In a separate pan heat 2 tbsp oil and add minced garlic, ginger jullien and
    green chilies.Fry till golden color and then add sliced big onion and
    capsicum cubes .Stir fry on high flame for 4-5 minutes.Do not over cook
    the vegetables.
5) Add fried chicken pieces and chopped green onions mix them well.Now
    lower the heat and add the sauce mixture.Mix well.
6) Take a small bowl add 1 tsp of corn flour with 1/2 cup of water. Add to
    chicken.
7) Cook till its gravy becomes slightly thick and dry, turn off the heat and
    move it in a serving dish.
   Serve hot.

Kolkata Egg Roll

Preparation Time :20-25 minutes
Cooking Time : 10-12 minutes
Serve : 2

Ingredients:

  • Maida : 1 cup
  • Sugar : pinch
  • Egg : 2
  • Cucumber: 1 cup thinly sliced
  • Onion : 1/2 cup thinly sliced
  • Green Chili :  2 chopped
  • Black pepper : 1tsp
  • Salt as per taste
  • Vegetable oil - 4 tablespoon
  • Tomato Ketchup as per your taste
  • Chili Sauce as per your taste
  • Lemon 1 cut into - 4 pieces
  • Water to make dough


Procedure:

1) Make a soft dough with maida, some salt,Sugar , 1 tbsp oil and water
    and keep aside for 15 minutes.After 15 minutes divide the dough into
    4 equal parts. Take one ball and roll it gently into a thin large circle
    with little atta or oil .

2) Heat the tawa and  fry gently each parathas without  oil like roti and
    keep in a plate.

3) Now take an egg and beat well with some salt. Heat 1 tsp oil on the
     tawa then take
    one paratha and fry it both sides till its colour slightly changes to brown
    ,keep aside and in that same tawa add 1/2 tsp oil,then pour the beaten
    egg on the hot tawa and spread the egg all over the pan and keep it as
    it is on heat for 30 seconds and after that place a paratha on the raw side
    of the egg and it will stick with the egg. Fry it well on both sides and
    place on a plate.

4) Now on the fried egg topped paratha sprinkle some lemon juice, put
    some sliced cucumber, onion, chili, pinch of black pepper powder,
    tomato ketchup & chili sauce. Sprinkle lemon juice as per your taste.
    Roll up the paratha with the vegetables in the center.Wrap up the roll
    into a paper towel. Repeat this whole process for rest of the parathas.
 
     Serve Hot.

Hariyali Kabab


Hariyali kabab
Preparation Time :1-4 hours
Cooking Time : 20 -30 minutes
Serve : 4
Ingredients:


  • Chicken : 500 gm boneless
  • Lemon juice / vinegar : 2-3 tbsp
  • Mint leaves : 1/4 cup paste
  • Cilantro leaves :1/4 cup paste
  • Green chilli paste : 1 tbsp
  • Yogurt : 1/2 cup
  • Fresh Cream : 3-4 tbsp
  • Garam masala : 1/4 tsp
  • Tandoori Masala : 1/4 tsp
  • Salt to taste
  • Vegetable oil : 2 tbsp



Procedure:

1) Cut chicken into medium pieces.
2) Marinate chicken with lemon juice ,salt for 15 minutes.
3) Then marinate chicken with rest of the ingredients for atleast 4 hours.
4) Turn on your oven to pre-heat. Set the temperature at 230°C/ 450°F.
    You can also cook these kababs on your barbecue or grill.
3) Lay the marinated chicken on a baking tray and put into your oven.
    Cook for 25 minutes, remove and turn the chicken pieces so that the
    part of the chicken  pieces that was facing down, is now facing up.
    Put back into the oven and cook another 20 minutes.(Water comes
    out during roasting, wait for water to dry.)
4) When done, gently remove the chicken pieces from the tray and
   arrange on a serving plate.
    Serve Hariyali Kabab with salad.

Dimer Devil / Deviled Eggs in Bengali Style

Preparation Time : 40 minutes -1 hour
Cooking Time : 10 minutes
Serve : 8

Ingredients :


  • Hard boiled egg : 4 (cut into halves)
  • Egg : 1 beaten
  • Potato : 3 large (boiled and smashed but not very smoothly)
  • Onion paste : 3 tbsp
  • Ginger-garlic paste : 1 tbsp
  • Red chilli powder : 1tsp
  • Dry roasted cumin powder : 1 tsp
  • Salt to taste
  • Sugar to taste
  • Bread crumb : 1 cup
  • Vegetable oil to deep fry



Procedure :

1) At first add oil in a pan and make it little hot.Then add onion paste ,stir it.
2) Add ginger-garlic paste . Cook for 2-3 minutes.
3) Then add the smashed potato with it and mix it very well with ginger-garlic
    and onion paste.
4) Add salt as per taste,chilli powder ,pinch of sugar and dry roasted cumin
    powder.
5) When smashed potato will mix well with all the masala turn off the heat
    and keep the potato mix aside and let it cool for sometime.
6) Now beat 1 egg in a small bowl with pinch of salt.
7) Make ready your bread crumb in a flat plate.
8) Now take each piece of the egg and cover it nicely with the smashed potato
    mixture.
9) Take the oval shaped devil dip it in egg and then roll it on bread crumb.
     Put it in a plate,cover it and keep in refrigerator for atleast half an hour.
     Take out from refrigerator and deep fry them.
     Serve hot with salads and ketchup.

Begun Bhaja / Fried Eggplant in Bengali Style

Serve : 4

Ingredients:


  • Eggplant : 1 round and medium
  • Salt to taste
  • Sugar to taste
  • Turmeric powder : 1/2 tsp
  • Rice flour : 1/4 tsp
  • Vegetable oil


Procedure :

1) Wash and then cut eggplant/ brinjal into 1/2 inch slices and put it in a bowl.
2) Mix with turmeric powder ,salt ,sugar and pinch of rice flour and set aside
     for 2-3 minutes.
3) Heat oil in a pan and deep fry the eggplant pieces over medium heat. Turn
     the pieces over after 4-5 minutes.
4) Turn off the heat once both sides off the pieces turn brown.Take out with a
     slotted spoon and drain on a kitchen towel.
      Serve hot.
