Yummy Vegetable Soup

Preparation Time : 5 minutes
Cooking time : 10 minutes

Ingredients :
  • Carrots: 1 medium cut into small cubes
  • Beet root :1 small cut into small cubes
  • Spinach : 2 cups chopped
  • Potato : 1 medium cut into small cubes
  • Green chilies : 1-2 
  • Masoor dal/ pink lentils : 1 handful
  • Garlic : 3-4 cloves chopped
  • Ginger : 1 tbsp very finely chopped
  • Salt to taste 
  • Vegetable oil/olive oil : 1 tsp


Procedure :

1) Cut all vegetables into small cubes.
2) Clean and wash masoor dal .
3) Take a pressure cooker and put all ingredients .Pressure cook for 2-3 whistles.

     Serve hot.

Anarosher Chatni / Bengali Pineapple Chutney

Preparation Time : 10 minutes
Cooking Time : 30 minutes

Ingredients :

  • Pineapple : 2 cup chopped
  • Methi /fenugreek seeds : 1/4 tsp
  • Dry red chili : 1 
  • Ginger paste : 1/4 tsp
  • Salt to taste
  • Sugar : 1/2 cup (You can add more or less as per your taste)
  • Raisins :10-12
  • Cashew nuts : 1 tbsp
  • Lemon juice : 1 tbsp
  • Cardamom powder : 1/2 tsp
  • Mustard oil : 1 tbsp


Procedure :

1)  If you use fresh pineapple then you have to pressure 
      cook it till it becomes soft.Now strain water and 
      make a paste of boiled pineapple and keep aside.
2)  Now heat oil in a kadai .Then add methi seeds and 
     dry red chili and wait for few seconds.
3) Add ginger paste and fry for a minute.Now add 
     pineapple paste and fry for 5-7 minutes in medium 
     heat Add salt.
4) Then add sugar and cook till sugar melts.
5) Add raisins and cook for 8-10 minutes in medium heat.
6) Now add lemon juice and mix it well . Adjust salt and  
    sugar taste.Cook for  4-5 minutes.
7) Sprinkle cardamom powder and mix well.Turn off the gas.

     Serve either chilled or at room temperature.

Kumro r Fry


Preparation Time : 1/2 hour
Cooking Time : 10 minutes

Ingredients :
  • Kumro /Pumpkin :2 cups cut into thin slices.
  • Posto / poppy seeds : 1/2 tsp
  • Kalo jeera : 1/2 tsp
  • Salt to taste
  • Sugar
  • Red chili powder : 1/2 tsp
  • Turmeric powder : pinch
  • Yellow Split peas/Matar dal :  1 cup paste
  • Vegetable oil : 1cup


Procedure :
1) Soak matar dal in water over night. Then make a fine smooth paste and keep
    aside.
2) Cut pumpkin into very thin slices.
3) Take a bowl and put dal paste,poppy seeds,kalo jeera ,salt,turmeric powder,
     red chili powder and sugar. And mix them well with hand for atleast 3-4
     minutes. Make a thick batter.
4) In a frying pan heat 1 cup of vegetable oil .Make it really hot.
5) Now dip pumpkin slices in dal batter. And then put it in hot oil very smoothly.
    Fry them on both sides till the dal coating becomes golden in colour and also
   crispy. Take out of oil and put it in a paper napkin to drain out excess oil. Fry
   them in batches.

Serve them hot.

Bengali Style Chicken Roast

Cooking Time : 1 hour

Ingredients :

  • Chicken : 4 pieces leg quarters
  • Raisins :8-10
  • Almond: 1 tbsp slices (optional)
  • Prune : 4-5
  • Vegetable oil : 4-5 tbsp
  • Sugar : 1 tbsp
  • Yellow food colour : 1/4 tsp
  • Kewra water : 1 tbsp
  • Tomato ketchup : 1 tbsp
  • Green chilies : 8-9
  • Fried onion / beresta : 1/2 cup
  • Garam masala powder : 1/2 tsp
  • Jaiphal-javitri powder : 1/4 tsp
  • Black pepper powder : 1/2 tsp
  • Cumin powder : 1/2 tsp
  • Red chili powder : 1 tsp
  • Poppy seeds paste : 2 tbsp
  • Ginger-garlic paste : 2 tbsp
  • Yogurt : 1/4 tbsp
  • Cream / malai : 2 tbsp
  • Milk powder : 2 tbsp
  • Mawa : 1/4 cup
  • Ghee : 2 tbsp
  • Salt to taste


Procedure :

1) First take a large bowl and put one by one chicken,prune,raisins,almonds,kewra
     water,tomato ketchup,food colour ,pinch of saffron ,salt,sugar and 2 tbsp oil.
     Mix them well .
2) Now heat kadai and add 2 tbsp oil.Heat it and then add marinated chicken along
    with all masalas.
3) Add green chiles and saute them.Then cover and cook for 10 minutes till chicken
    pieces changes its colour on all sides.
4) In a small bowl take garam masala powder,jaiphal-javitri,black pepper powder,
    cumin powder,red chili powder,poppy seed paste,ginger-garlic paste and yogurt.
    Mix them well.
5) Now add the mixture to fried chicken  and fried onion and mix them well.Now
    cover and cook for another 30 minutes in medium-high heat till chicken is fully
    cooked.
6) Now add cream,milk powder , mawa and ghee and mix them well and cook for
    another 10 minutes. Turn off the heat.

Serve hot with rice ,roti or paratha.

Watermelon Juice

Ingredients :
  • Watermelon : seedless ,1 small cut into cubes
  • Yogurt : 3-4 tbsp
  • Sugar : 4-5 tbsp
  • Black salt : 1/2 tsp
  • Ice cubes : 3-4 crushed
  • Fresh cream: 1 tbsp for garnishing


Procedure :

1) Cut watermelon into cubes and remove seeds.
2) In a juicer take all ingredients and blend well.
3) Serve watermelon juice in glasses.

    Serve chilled.

Bread Upma

Ingredients :

  • Bread : 4 slices cut into very small cubes
  • Onion : 1/4 cup finely chopped
  • Green Chilies : 2 chopped
  • Curry leaves: 3-4
  • Red bell pepper : 2-3 tbsp finely chopped
  • Tomato : 2-3 tbsp Chopped
  • Black mustard : 1/8 tsp
  • Cumin seeds : 1/8 tsp
  • Tomato ketchup : 1 tbsp
  • Salt to taste
  • Olive oil : 1tbsp


Procedure :

1) First cut bread slices into small cubes and put it in a 
    bowl .Sprinkle 1 -2 tbsp of water over it.
2) In a pan add oil and heat it.
3) Then temper it with cumin seeds and mustard seeds.
     Wait for few seconds.
4) Add chopped onion ,green chilies and curry leaves.
    Saute for a minute in medium-high heat.
5) Now add other vegetables. You can add any 
    vegetables of your choice.Add salt.
6) Stir it for 4-5 minutes in medium heat till all 
    vegetables becomes soft.
7) Add ketchup and mix it with vegetables.
8) Add cube bread pieces and mix them well with
    vegetables. Cook for 2 minutes.Turn off the heat.

    Serve hot with tea.

Chicken in Coconut milk Gravy

Ingredients:
  • Chicken : 500 gm boneless, cut into medium pieces
  • Mustard seeds : 1/2 tsp
  • Cumin Seeds : 1/2 tsp
  • Dry whole red chili : 2-3 broken
  • Bay leaf :1 medium
  • Cinnamon stick : 1"
  • Onion : 1 cup finely chopped
  • Curry leaves : 4-5
  • Ginger paste : 1 & 1/2 tbsp
  • Garlic paste : 4 cloves
  • Green chili paste : 5-6
  • Corriander powder : 1tsp
  • Garam masala powder : 1 tsp
  • Kashmiri red chili powder : 1 tsp
  • Coconut milk : 1 can / 400 ml
  • Salt to taste
  • Vegetable oil : 4-5 tbsp
  • Cilantro leaves : 3 tbsp finely chopped


Procedure :

1) In a pan add oil and heat it. Temper it with mustard seeds,cumin seeds,dry whole
     red chili ,bay leaf and a cinnamon stick.
2) Add chopped onion, fry them 3-4 minutes in medium heat.
3) Now add curry leaves and fry it with onions for another 5 minutes in medium heat.
4) Add ginger paste,green chili paste,garlic paste and mix them well.Saute it for 2
     minutes.
5) Now add corriander powder .kashmiri red chili powder,garam masala powder and
    salt.Mix them well.Fry them for 5 minutes in medium heat.
6) Add coconut milk ,mix it well with masala.Don't add water.let it cook for 4 minutes.
7) Now add chicken pieces .Saute gently.Cover and cook for 20 minutes in medium
    heat. If the gravy tends to stick in bottom of the pan add very little water.Cook till
    chicken is fully cooked.
8) Add chopped cilantro and check seasoning.Cook for 2-3 minutes and turn off the
    heat.

Serve hot with paratha ,naan or steam rice.

Basil Egg Fried Rice

Cooking Time : 15 minutes

Ingredients :
  • Basmati Rice : 2-3  cups cooked and chiled
  • Capsicum : 1/2 cup thinly sliced
  • Egg : 2 
  • Oyster sauce : 2 tbsp
  • Soya sauce :1 tbsp
  • Fish sauce : 2 tbsp
  • Sugar : 1tsp
  • Garlic : 4-5 cloves finely chopped
  • Green chilies : 3 finely chopped
  • Onion : 1/2 cup chopped
  • Basil leaves : 1/2 cup
  • Vegetable oil/ olive oil : 3-4 tbsp
  • Cilantro : 1/4 cup 


Procedure:

1) Take a small bowl and put oyster sauce ,fish sauce ,soya sauce and sugar.Whisk
     them together and keep aside.
2) In a large frying pan heat oil over medium-high heat.
3) Add chopped garlic and green chilies and stir fry for 30 seconds.
4) Add sliced capsicum and onion and stir fry until the onion is translucent.
5) Push all fried veges in the pan aside and make scramble egg.
6) Now add the oyster sauce mixture and mix everything well.
7) Raise the heat to high and add the rice. Mix them well with the sauce and other
     ingredients.
8) When everything mix alltogether add basil leaves ,mix them with rice.
     Turn off the heat.Garnish with cilantro.

      Serve hot with any chicken dishes.

Bread Pizza

Ingredients :

  • Bread : 4 slices
  • Butter : 1 tbsp (optional)
  • Chicken : left over 4 medium pieces
  • Onion : 1 small chopped
  • Green chilies : 1 (optional)
  • Capsicum : 2 tbsp chopped
  • Red capsicum : 2 tbsp chopped (optional)
  • Salt to taste
  • Tomato ketcup : 1 tbsp
  • Cheese slices : 4
  • Cheese : 1 cup grated
  • Vegetable oil: 1 tbsp


Procedure :

1) If you have left over chicken pieces then chopped them into very small pieces.You
     can also use fresh chicken.
2) In a kadai / pan add 1 tbsp oil ,heat it.Then add all vegetables and chopped meat
     and mix them well.
3) Sprinkle salt ,mix well.
4) Add tomato ketchup and mix them well.Cook them until all vegetable becomes soft.
    Turn off the heat .
5) Now put sliced bread on a baking tray . Spread each of the bread with butter.
6) Put one slice of cheese on each bread. You can also avoid this step.
7) Now top  the cooked vegetables and meat on the bread slices.
8) Now over the vegetables and meat put grated cheese as per your taste.
9) Preheat the oven and put the tray in the oven and bake it at 250 degree farenhit for
    8-10 minutes.

    Serve with chili flakes or hot ketchup. Enjoy .

Malai ChamCham

Preparation Time : 1 hour
Cooking Time : 1 hour

Ingredients :

  • Milk : 6 cups +2 cups
  • Lemon : 1
  • Maida : 1 tsp
  • Sugar : 2 cups + 4 tbsp
  • Water : 5 cups
  • Elaichi : 3 crushed
  • Pistachio : 5-6 
  • Saffron : pinch


Procedure :

1) In a heavy bottom pan boil milk, stir occasionally, making sure not to burn
    milk.As the milk comes to a boil, add the lemon juice gradually and stir the
    milk gently.Lower the heat. Almost in seconds you will see the milk curdle
    and clumps of white milk solids forming.When you see the greenish water
    separating ,turn off the heat and let it sit for 4-5 minutes.

2) Now drain the chana using a strainer line with a cheesecloth or muslin cloth.
    Next lightly rinse the chana with water to remove the lemon taste and let it
    drain.Squeeze out  the excess water from the chana.
 
3)  Once the chana is drained, place on a dry, clean surface and knead the
     chana for 15-20 minutes until the chana is almost rolls into smooth soft
     dough.In the mean time, you add 1 tsp of maida.Knead the chana with the
     heel of your palm .The chana will become smooth and your palm will  be
     little oily from the fat of the chana.

4)  Take small portion of it and roll into small balls between your palm. The
      balls should be smooth and firm.Now give Chamcham an oval shape and
      place it on a plate. Prepare all Chamcham balls.Approximately 9-10
     chamcham will be made from this measure.

5)  In a heavy bottom pan make a syrup adding 5 cups of water and 2 cups
     of sugar. Keep it at medium high heat and  bring to boil. Add 2-3 crushed
     cardamom.let it boil for 5-6 minutes.Syrup should be thin.

6)  Add all raw chhana  to the syrup .Cover the pan with lid.Cook in high
     heat for first 4-5 minutes,then cook for another 20-25 minutes in medium
     heat.Now turn off  the heat and wait for 10-15 minutes.

7)  Only take out Chamcham with no sugar syrup and put it in a bowl.

8)  Make kheer / malai in a small pan.Add 2 cups of milk and boil it. Stir continuously .
     Other wise milk will burn at the bottom.Boil milk till its volume become half.
     Add 4 tbsp of sugar and stir it still it dissolves in milk.Turn off the heat and let
     it settle down for 3-4 minutes.

9)  Now pour kheer/ malai over chamcham in the bowl. Garnish with 5-6 finely
     chopped pistachios and saffron. Add 1/2 tsp of rose water over chamcham.

     Serve it chilled or warm.

Begun Diye Ilish Macher Jhol / Hilsa Fish With Eggplant

Preparation Time : 5 minutes
Cooking Time : 20-25 minutes
Serves :2-3

Ingredients :

  • Ilish mach : 2-3 pieces 
  • Potato : 1 very small cut into thin pieces length wise
  • Begun/eggplant :1 small cut into length wise
  • Kalojeera / kalonji : 1/2 tsp
  • Salt to taste
  • Turmric powder : 1/4 tsp
  • Cumin powder : 1/2 tsp
  • Ginger paste : 1 tsp
  • Green chilies : 4 
  • Mustard oil 


Procedure :

1) Heat oil in a pan and fry ilish pieces very lightly and keep aside.
2) In the same kadai or pan add  2tbsp oil ,heat it and then fry eggplant pieces.
     Cover and cook them till they are soft.Take them out from oil and keep aside.
2) Now add 2 tbsp oil in the pan heat it and temper it with kalonji.
3) Add potato pieces and fry it for 2 minutes.
4) Now add slited green chilies ,turmeric powder, ginger paste ,cumin powder and
    little salt.Mix them well and saute for another 5 minutes till raw smell of masala
    goes away.
5) Add 1 cup of water .Let it boil and cook till potatoes are 70 % done.
6) Now add fried eggplant and fish pieces .Cover and cook till all the veges are
    completely done.If required add some more water.Simmer and cook for 10 minutes
    and more.Check the salt.Turn off the heat.

    Serve hot with steam rice.

Chicken Manchurian

Cooking Time : 30 -35 minutes
Serves : 4-5

Ingredients :
  • Chicken : 400 gm boneless, cut into small cubes 
  • Garlic : 5-6 cloves finely chopped
  • Ginger : 2 tbsp finely chopped
  • Onion : 1/4 cup slices
  • Capsicum : 1/4 cup thin slices,cut into length wise
  • Egg : 1 large
  • Dark soya sauce :2- 3 tbsp
  • Corn flour / Corn starch : 2-3 tbsp
  • Cashew nuts : 1 tbsp broken (optional)
  • Salt to taste 
  • Green Chilies : 5-6 finely chopped
  • Chili Vinegar : 2-3 tbsp
  • Vegetable oil : 4 tbsp + deep fry
  • Spring onions : 1 tbsp finely chopped for garnishing


Procedure :

1) Take a bowl, put chicken pieces,1 tbsp soya sauce,pinch of salt,1 tbsp vinegar,
     1 tbsp corn flour and an egg.Mix them well and keep aside.
2) Now heat sufficient oil in a frying pan to deep fry chicken pieces.Fry them in
    batches for 3-4 minutes. Take them out from oil and keep it on paper towel.
3) Now take another large pan and heat 4 tbsp oil.
4) Add chopped garlic,chopped ginger and chopped green chilies.Fry them for
    1-2 minutes in high heat till its colour changes to brown.
5) Then add onion slices and capsicum slices .Fry them for 3 minutes.
6) Now add 1 and 1/2 tbsp of soya sauce,1 tbsp of vinegar ,pinch of salt (if
     required).Mix them well.
7) Add chicken pieces and  .Stir it and mix them with the sauce.Add cashew nuts
    if you like.
8) Now in a small bowl take 1 cup of water and 1 tbsp of corn starch. mix them
    and pour it over chicken pieces. Stir them continuously until the sauce starts
    to thicken.You can make it dry or can have gravy according to your taste.
    Check the seasoning.

   Garnish it with spring onions. Serve hot with fried rice.

Mutton Nihari

Preparation Time :15-20 minutes
Cooking Time : 2 hours

Ingredients :
  • Mutton : 500 gm
  • Onion : 1 large thinly sliced
  • Garlic paste : 4-5 cloves
  • Ginger paste : 1 tbsp
  • Shan Nihari masala : 2 tbsp
  • Roasted wheat flour : 2 tbsp
  • Shah jeera : pinch
  • Annie star : 1
  • Javitri : 1/2
  • Cardamom : 4
  • Cinnamon : 1"
  • Whole black pepper : 4
  • Laung : 4
  • Salt to taste
  • Vegetable oil : 6-7 tbsp
  • Ghee : 2 tbsp


Procedure :

1) Clean and wash mutton pieces and keep aside.
2) Take a pressure cooker.Add 1 tbsp oil, heat it. One by one add all whole garam
     masala (shah jeera,annie star,javitri,cardamom,cinnamon,whole black pepper,
     laung) and fry them for few seconds.
3) Add mutton pieces and 1 tsp of salt .Saute them for 2 minutes.
4) Now pour 2 cups of water and pressure cook it.(2 whistles). Strain mutton pieces
     and keep aside.
5) Now take a kadai ,heat oil and ghee.Now add sliced onion and fry them till its
    colour changes to light brown.Take out half portion of onion slices for oil and keep
    aside.And fry rest of the onion slices to dark brown.Fry them in medium heat.Also
    take this portion of fried onion or beresta from oil and keep aside.Let it cool down
    and then keep it in refrigerator for half an hour.It will make beresta crispy.
6) Now in the remaining oil again put lightly fried onion and then add mutton pieces.
    Mix it well with fried onion.Cook it for 2 minutes in medium heat.
7) Now add ginger and garlic paste.Mix them well.Then add nihari masala.saute it for
    another 4-5 minutes in medium heat.
8) Now add meat broth from pressure cooker and let it boil.Cover the kadai and cook
     till mutton is almost done.
9) In a frying pan dry roast 1-2 tbsp of wheat flour / atta for few seconds.
10) Now sprinkle roasted flour over mutton and mix them well.Cook for another 5-6
     minutes .Atta will help your gravy to become thick.Check the seasoning.
11) Now add crispy fried onion ,mix them well.Your mutton nihari is reay to serve.

 Serve hot with roti,naan or rice.

Hridoy Horon Pithe

Preparation Time : 1 & 1/2 hour
Cooking Time : 1 hour

Ingredients :
  • All purpose flour / maida : 1 & 1/2 cup
  • Ghee : 1/4 cup
  • Salt : pinch
  • Baking soda : 1/8th tsp
  • Baking powder : 1/8 th tsp
  • Milk : 1/2 cup
  • Sugar : 1 cup
  • Water : 1 & 1/2 cup
  • Saffron : pinch
  • Cardamom : 2 crushed
  • Vegetable oil : 1 cup


Procedure :

1) In a bowl take flour ,pinch of salt ,baking soda and baking powder. Mix them
    well. Add ghee and mix it well with flour. Knead it for 10 minutes with your
    palms. Now add milk and knead them well.Make a soft dough.Keep it aside
    for atleast 30 minutes.
2) Now take a pan and boil water and sugar . Add crushed cardamom .Make thick
    syrup. Keep it aside.
3) Divide the dough 5-6 balls and roll each balls into very thin flat bread.
4) Fold the flat bread as paper fan and fold in half. Seal inside with wet finger and
    fold  the open edges opposite way to make a heart shape and seal with water and
    cut the excess part.



5) Heat oil in a frying pan and fry pithe on medium heat till its colour changes to
    golden brown.
6) Soak them in warm sugar syrup for at least 1 hour. Take them out from syrup .
    Garnish them with saffron.

Sanghai Chicken

Preparation Time : 5 minutes + marination time
Cooking Time : 30-35 minutes

Ingredients :
  • Chicken : 500 gm boneless cut into cubes
  • Onion : 1/2 cup chopped
  • Egg : 1 
  • Salt to taste
  • Cornflour/ corn starch : 1+ 2 tbsp
  • Vegetable oil :2 tbsp + oil for deep frying
  • Garlic : 1 tbsp  grated
  • Ginger : 1tbsp  grated
  • Green chillies :  5-6 cut length wise
  • Soy sauce : 4 tbsp
  • Tomato ketchup : 4 tbsp
  • Vinegar : 1 tbsp
  • Brown sugar : 1 tsp
  • Carrot diced: 3-4 tbsp
  • Cabbage : 1/2 cup diced
  • Green peas : 1/4 cup boiled
  • Spring onions : 1/4 cup chopped
  • Roasted peanuts : 2 tbsp
  • Cashew nuts : 1 tbsp for garnishing
Procedure :

1) Take a bowl and put chicken pieces,egg,salt,1 tbsp soya sauce and corn flour
     and mix them well.Keep aside for atleast half an hour.
2) Heat sufficient oil in a deep frying pan, and fry the chicken cubes till golden
     and crisp.Fry them in batches.Drain on paper towel and keep aside.
3) Now heat 2 tbsp oil in a large pan or kadai .Add grated garlic and grated ginger
    and fry it in medium heat till fragrant comes out.
4) In a small bowl put 2 tbsp soya sauce,4 tbsp tomato ketchup, 1 tbsp vinegar and
    1 tsp brown sugar.Mix them well.
5) Now add slited green chillies and the mixture of sauces .Stir it for 3-4 minutes.
6) Now add chopped vegetables (carrot, cabbage, green peas, spring onions) and
    peanuts and toss to mix. Cook till all the vegetables becomes soft.
7) Add the fried chicken cubes, salt and mix well. Cook for another 3-4 minutes.
    Stir continuously.You can serve it as a dried Sanghai chicken for snacks.Also you
    can make little gravy.
8) For gravy take a small bowl, put 1/2 cup of water and 1 tbsp of  corn flour in it .
     Mix them well and pour it in the chicken. Stir continuously for 2- 3 minutes to
    avoid lumps.You can add more or less water mixed with cornflour as per your
    likings.Taste the seasoning. Put it in a serving dish and add few cashew nuts
    over it for garnishing.Turn off the heat.

    Serve hot with chinese fried rice.

Serves  : 4-5

Ingredients:

  • Tuna fish : 1 can
  • Potato : 1 large boiled
  • Onion : 1/2 cup finely chopped
  • Garlic : 3-4 chopped/ crushed
  • Ginger : 1/2 tsp
  • Cumin powder :1/2 tsp
  • Coriander powder: 1/4 tsp
  • Salt to taste
  • Green chilies : 3 chopped
  • Bread crumb : 1 cup
  • Egg : 1
  • Garam masala powder : 1/2 tsp
  • Kashmiri red chili powder : 1/2 tsp
  • Sugar :1/2 tsp
  • Cilantro : 1 tbsp finely chopped
  • Vegetable oil for deep frying

Procedure :

1) Drain water from caned tuna and keep it aside.
2) In a kadai add 2 tbsp oil ,heat it.Then add finely chopped onion , crushed garlic
    and chopped green chilies.Fry it for 1-2 minutes.
3) Now add ginger paste,cumin powder,coriander powder,kashmiri red chili
     powder and very little  salt as caned fish contains salt .Mix them together and
     fry for 3-4 minutes.
4) Now add fish and smashed potato .mix them very well with fried masala.Cook
     for 5-7 minutes in medium-high heat .
5) Add little sugar ,chopped cilantro,garam masala powder .Stir them well and
    cook for another 2-3 minutes.Adjust the salt.
6) Cook till all the masala and fish mixed properly.Keep them in a plate. Let
     it cool down and keep it in a refrigerator for atleast an hour.
7) Take a small portion of mixture and give it shape(round ,flat like patties or
     cylindrical) and keep aside.
8)  Now take a bowl and beat an egg with pinch of salt.
9) Take some bread crumb in a flat plate.
10) Dip chop in egg and then roll it in crumb.
11) Then deep fry it in medium flame till chop becomes crispy and its colour
      changes to golden brown. Take them out from oil and put it over a kitchen
      paper napkin to soak the excess oil.
   
       Serve hot with salads and ketchup.

Pati Shapta

Preparation Time : 1-2 hours
Cooking Time : 1 hour

Ingredients :
  • Coconut : 2 cups finely grated
  • Condensed milk : 1 can
  • Sugar : 1 cup
  • Sooji / semolina : 1 cup
  • Maida : 1+ 1 cup
  • Milk : 1/2 cup
  • Water : 2 cups
  • Mustard oil / Ghee: 1-2 tbsp
  • Bay leaf : 1 small
  • Cardamom powder : 1/2 tsp


Procedure :

1) In a large bowl add 1& 1/2 cup maida ,1 cup sooji ,1/2 cup sugar and 1 cup
    water. Mix them well so that there are no lumps.You can also add milk instead
    of water.Keep the mixture for an hour. Make a medium consistency batter i.e
    not too thin nor too thick and it should be free flowing. If reqiured add more
    water and sugar.
2) In a kadai add grated coconut ,sweetened condensed milk ,1/2 cup milk and
    3 tbsp sugar. In medium heat keep stirring the mixture till its get sticky.
    Coconuts tends to burn easily so keep stirring continuously. Make the mixture
    little dry so that there remains almost no moisture.If you make it completely dry
    and then the filling will become hard to eat.
3) Add cardamom powder to the coconut mixture. Mix them well. Remove from
    heat and keep it aside to cool.
4) Take 2 tbsp of coconut mixture and give it a thin cylindrical shape.
5) Take a non stick pan or tawa and heat it.Cut the upper part of an eggplant and
    keep the stalk intact .Put very little oil or ghee on the pan and spread oil over
    the pan with eggplant head and heat it.
6) Make the heat medium-low. Put 1 large ladle or 4 tbsp of batter over the pan
    and spread it evenly with a bay leaf or you can also use back of your ladle and
    make it an round shape.
7) Before the batter tends to solid put the coconut filling lengthwise at one end of
    the crepe . Now roll the crepe very gently from the filling side towards the inner
    direction. Press it gently with a spatula on both ends so that roll will remain tight.
    Keep it in one end of  the pan for 1- 2 minute and cook it on both sides of the
    patishapta. Now remove from heat put it in a serving dish.

   Serve it warm or cold.

Mixed Fried Rice

Preparation Time : 25-30 minutes
Cooking Time : 30-40 minutes

Ingredients :

  • Basmati rice : 2-3 cup cooked
  • Carrot : 1/4 th cup
  • Peas : 1/4 th cup
  • Spring onions : 1 tbsp finely chopped
  • Onions : 1/4 th cup finely chopped
  • Egg : 1 large scrambled
  • Boneless chicken : 1/2 cup and cut into small cubes
  • Prawn/ shrimp : 1/2 cup small
  • Ginger : 1 tbsp grated
  • Garlic : 1 tbsp grated
  • Soya sauce : 2 tbsp
  • Green chilies : 1-2 tbsp finely chopped
  • Salt to taste
  • Sugar : 1/2 tsp
  • Vegetable oil / olive oil :7-8 tbsp


Procedure :

1) Wash rice and soak for 30 minutes in water.First you prepare rice  like  it is
     normally done or you can also use left over rice.
2) Spread it on plates under a fan so that the remaining moisture is vapourized
     and the rice becomes dry.
3) In a heavy bottom pan / kadai heat 2 tbsp oil on medium heat till it melts. Fry
     chicken cubes with little salt till chicken pieces becomes soft.Keep aside.
4) In the same pan add 2 tbsp oil heat it. Fry shrimp with pinch of salt.Cook them
    for 4-5 minutes in medium heat.Keep aside.
5) Now make scramble egg and keep aside.
6) In the same kadai add rest of the oil ,heat it.Add grated garlic and ginger.Stir it
    for a minutes.Then add carrots,green peas,chopped onions,spring onions and
    green chilies.Sprinkle salt.cook them till all the vegetables becomes soft.
7) Now add scramble egg,fried shrimp and fried chicken.Mix them well.Add
    soya sauce.
8) Now add cooked rice and mix it with chicken mixture.Add little sugar and stir
    it for 3-4 minutes.And now turn off the gas.
 
    Serve hot with any non vegeterian dishes.

Nolen Gurer Sandesh

Preparation Time : 2 hours
Serves : 10

Ingredients :
  • Whole Milk : 1 & 1/2 litre
  • Lemon juice : 1 large
  • Sugar : 4 tbsp
  • Gur  :1 cup grated
  • Elaichi powder : 1/2 tsp
  • Raisins : 20-25

Procedure :

1)  In a heavy bottom pan boil milk, stir occasionally, making sure not to burn
     milk.As the milk starts boiling, add the lemon juice gradually and stir the
     milk gently.Lower the heat to medium. In few minutes milk will curdle and
     cluster of white milk solids will forms.When you see the greenish water
     separating ,take it off from heat.

2) Now drain the chana using a strainer line with cheesecloth or muslin cloth.
    Next lightly rinse the chana with water to remove the lemony taste and let it
    drain.Squeeze out  the excess water from the chana.Take out the excess water
    firmly press the cloth, or put  the wrapped chana under a heavy pan for about
    one hour.

3) Once the chana is drained, place on a dry, clean surface and knead the chana
    for 15 minutes until the chana is  almost rolls into smooth soft dough .Knead
    the chana with the heel of your palm .The chana will look like a smooth  dough.
    You can also knead it with blender.

4) Now add sugar, gur and elaichi powder and again knead for 5 minutes till gur
     and sugar properly mix with chana.

5) Take a non stick pan add chana .On a medium low heat start cooking the mixture.
    You need to keep stirring it continuously to avoid burning at the bottom, while
    doing so scrape the sides occasionally.Keep stirring for 5 minutes.Switch off
    the heat and take it out on a plate or bowl.  Cover and keep it in refrigerator
    for atleast an hour.

6) Now take out from refrigerator and make sandesh.Give shape as you like.
    Garnish them with raisins.

    Serve chilled.
