Kumro r Fry


Preparation Time : 1/2 hour
Cooking Time : 10 minutes

Ingredients :
  • Kumro /Pumpkin :2 cups cut into thin slices.
  • Posto / poppy seeds : 1/2 tsp
  • Kalo jeera : 1/2 tsp
  • Salt to taste
  • Sugar
  • Red chili powder : 1/2 tsp
  • Turmeric powder : pinch
  • Yellow Split peas/Matar dal :  1 cup paste
  • Vegetable oil : 1cup


Procedure :
1) Soak matar dal in water over night. Then make a fine smooth paste and keep
    aside.
2) Cut pumpkin into very thin slices.
3) Take a bowl and put dal paste,poppy seeds,kalo jeera ,salt,turmeric powder,
     red chili powder and sugar. And mix them well with hand for atleast 3-4
     minutes. Make a thick batter.
4) In a frying pan heat 1 cup of vegetable oil .Make it really hot.
5) Now dip pumpkin slices in dal batter. And then put it in hot oil very smoothly.
    Fry them on both sides till the dal coating becomes golden in colour and also
   crispy. Take out of oil and put it in a paper napkin to drain out excess oil. Fry
   them in batches.

Serve them hot.

Matar Dal In Bengali Style

Ingredients:


  • Yellow Split peas / matar dal : 1 cup
  • Cumin seeds : 1 tsp
  • Garlic : 2-3 cloves minced
  • Onion : 3-4 tbsp finely chopped
  • Green chilies : 3-4 slit
  • Salt to taste 
  • Sugar to taste(optional)
  • Garam masala powder : 1/4 tsp
  • Ghee to sprinkle
  • Vegetable oil : 1-2 tbsp


Procedure :

1) Wash and cook 1 cup of matar dal in the pressure cooker 
     with little turmeric and 2 cups of water.
2) In a deep bottomed pan heat oil and temper with cumin   
    seeds ,garlic minced. When the spices splutter add 
    chopped onion and green chillies.
3) Fry till the onion turns a nice pink and is softened.
4) Add the cooked dal and mix well.
5) Add salt and desired amount of water if reqiured. Let the  
    dal come to a boil.
6) Add a little ghee and garam masala powder ,mix well and 
    turn off the heat.
 

   Serve hot with steam rice.

Peyaji / Onion Pakora

Preparation time : 45-50 minutes
Cooking Time :10 minutes
Serves :4-5
Ingredients :


  • Onion : 1 cup chopped
  • Yellow split peas/matar dal : 1 cup paste
  • Green chilies : 1-2 chopped
  • Turmeric powder : 1/2 tsp
  • salt to taste
  • Sugar : 1 tsp
  • Vegetable oil/ canola oil to deep fry


Procedure : 

1) Mix all ingredients except oil.
2) Heat oil in a deep frying pan.
3) Make thin patties out of the onion mixture on your palm and 
    slowly slip it into hot oil.
4) Fry on both side till they turn light brown.
5) Remove from oil and place on absorbent papera to absorb 
     excess oil.
     Serve with tea, puffed rice. You can also serve rice and dal 
     as a side.
