Dhone pata bata

 

Dhone Pata Bata
Ingredients:

  • Coriander leaves/cilantro leaves: 1 bunch 
  • Mustard oil: 1/2 tsp
  • Kalonji / kalo jeera : 1/2 tsp
  • Salt to taste
  • Green chilies: 2 whole 
Procedure: 

1) Take a big bowl , put the cilantro leaves and soak it inwater for 5 minutes. This process help to settle down mud from leaves in the bowl. Now take out the leaves from the bowl and throw away dirty water. Repeat this process till you find clear water.

2) In a mixer grinder jar take coriander leaves, green chilies. If you want you can add 2 pods of garlic, a small amount of ginger and more chilies as per your taste. I make it simple.Make a fine paste of it.

3) Now take a non stick pan heat it add oil. Let it warm ,then add kalo jeera/ kalonji. As the aroma comes out add the paste. No need to strain it. Now cook it in medium heat till water is absorb.

4) You will get the final quantity of the bata. Now add little amount of salt. Mix it properly and cook it till it becomes a dough. Cooking is ready to serve.

Serve it with hot steam rice.

Mince chicken kabab

mince chicken kabab


Ingredients :
  • Chicken : 500 gm mince
  • Fried onion / beresta : 1 cup
  • Ginger paste : 1 tsp
  • Garlic paste : 1 tsp
  • Turmeric powder: 1/2 tsp
  • Salt to taste
  • Cumin powder : 1 tsp
  • Coriander powder : 1 tsp
  • Kashmiri red chili powder : 1 tsp
  • Bread crumbs: 1 cup
  • Coriander leaves : handful finely chopped 
  • Garam masala powder : 1 tsp
 
Procedure :

1.In a bowl take all the ingredients except oil. Give everything a good mix.If the mixture feels too sticky 
you can add 1-2 tbsp of breadcrumbs.Now take a 
frying pan , heat oil.In mean time shape the kababs 
into flat discs and shallow fry them until golden brown 
on both sides.  You can dip them in egg ,and roll them 
in a bed of breadcrumbs before frying if you want.
Take them out and put them in a serving dish.

 Serve them hot with salads, sauce or chutney

Mango Phirni / Aam ki Phirni

 

Mango Firni

Ingredients :

  • Mango : 1 large ripe
  • Basmati rice : 1/2 cup
  • Milk :700 ml
  • Sugar :2 tbsp
  • Almond/Pesta/cashew : 2 tbsp
  • Cardamom powder: 1/4 tsp
Procedure:

1)First in a small bowl take basmati rice or gobindo bhog rice . Wash it and soak it for 45 minutes.After that drain water from rice and spread that rice over a kitchen towel. Let it dry for about 15-20 minutes till all excess water is soaked.

2)Now make a coarse powder in a mixer grinder. Not fine powder.It should be little grainy.Now keep aside.

3)Now in a heavy bottom pan start boiling milk.First boil it in high heat once it is about to spill lower the heat and stir continuously. Let it boil for 10 minutes. Now add rice powder to the milk and stir occasionally.

4)In the meantime chop the mango and in a mixer grinder make a puree of mango. Make a smooth puree. And keep a small amount of chopped mango for garnishing.

5)Cook milk and rice till it’s consistency becomes thick and rice is fully cooked.

6)Lower the heat and add mango puree. Mix it properly.

7)Now add sugar like 2 tablespoons and chopped dry fruits. Add cardamom powder and mix them well. Taste it. If required add more sugar.Don’t make the flame high otherwise milk can curdles.Cook till it comes to your desired consistency.

8)Now put it in serving bowl. Add dry fruits and chopped mango over it for garnishing.

9)Keep it in refrigerator for at least half hour.

Serve cold or at room temperature.

Oats cheela/Oats Pancake

 

Oats cheela/Oats pancake 

Ingredients :

  • Oats : 1 cup
  • Sattu : 2 tbsp ( optional )
  • Water : 1 cup
  • Egg : 1
  • Carrots : 1/2 cup grated
  • Capsicum: 1/4 th cup finely chopped 
  • Onion: 1/4 th cup finely chopped 
  • Coriander leaves: 1 tbsp finely chopped 
  • Green chilies: 2 finely chopped 
  • Salt to taste
  • Olive oil :2 tbsp
Procedure:

1) First take a kadai and dry roast the oats and then keep it in a mixing bowl.

2) Add a cup of water to oats and let it soak for 10 minutes.

3) Meanwhile chop all the vegetables.

4) Now with the help of hand smash that soaked oats.Now add all the ingredients to it. And mix them well.If required add more water to make the desired consistency. It will be medium consistency (not too thick neither too liquid).

5) Now take a frying pan .Add few drops of oil and spread it with a brush. Pour 2 tbsp of batter and spread it like a pancake or cheela and cook in low heat.Cover it with a lid and wait for 2-3minutes. Now now remove the lid and turn the pancake and cover and cook the other side for another 2-3 minutes.

6) In this way turn by turn make the cheelas. Outer layer will be crispy and inside it will be soft.

Serve the hot Oats cheela with ketchup.

Lotte Macher Jhuri / Bombil fish recipe/bombay duck fish recipe


Lotte macher jhuri

 Ingredients:

  • Lotte mach / Bombay duck fish : 500 gm without head
  • Garlic paste : 2 tablespoons 
  • Onion slices : 1.5 cup
  • Tomatoes : 1 cup finely chopped 
  • Green chilies: 3 chopped
  • Coriander/ cilantro: 2 tbsp finely chopped 
  • Ginger paste : 1tbsp
  • Cumin powder : 1 tsp
  • Coriander powder: 1 tsp
  • Turmeric powder : 1 tsp
  • Kashmiri red chilly powder : 1 tsp
  • Garam masala powder : 1 tsp
  • Salt in less amount
  • Sugar optional 
  • Mustard oil : 4 tbsp
Procedure:

1. First clean and wash fish and keep aside.

2. Now in a small bowl add ginger paste, cumin powder, coriander powder, turmeric powder and kashmiri red chili powder and add 1-2 tbsp water . Mix it well and keep aside.

3. Now take a kadai or a non stick pan ( I prefer nonstick pan)and add mustard oil . Heat it. 

4. Add onion slices and fry it for 2 minutes in medium heat.After that add garlic paste. In this recipe we add little more amount garlic and spices to reduce the smell of fish. Fry it again for 2 minutes.

5. Add chopped tomatoes and green chilies. You can add more or less chilies as per your preference. Saute it. Now sprinkle very little amount of salt like 1/4 tsp as the fish is itself salty. Give a mix and cover and cook for 2-3 minutes.

6. Now add the masala paste and mix all the ingredients properly and cover it again. We have to wait for a minute.

7. After that we will add lotte fish and mix it with the masalas.We will add raw fishes. We will cover and cook for 5 minutes
medium heat. After 5 minutes we will find that fish has become soft. With the help of spatula will mix the mixture very well. Again we will cover it and cook till all the masalas and fishes smashes properly.we don’t have to add water as the fish releases water and the recipe will be dry.

8. After almost 10 minutes( we will check in between ) we will remove the cover and will start stirring. We will raise the heat to medium high heat. We will stir it till water absorb. If you want to add salt at this point first taste it , then add salt accordingly.Now you add sugar if you need.

9. Sprinkle garam masala powder and chopped coriander leaves.Give a good mix .Our cooking is ready. Now we will put it in a serving dish.

Our lotte fish jhuri dish is done. Serve it with hot steam rice.
