Yummy Vegetable Soup

Preparation Time : 5 minutes
Cooking time : 10 minutes

Ingredients :
  • Carrots: 1 medium cut into small cubes
  • Beet root :1 small cut into small cubes
  • Spinach : 2 cups chopped
  • Potato : 1 medium cut into small cubes
  • Green chilies : 1-2 
  • Masoor dal/ pink lentils : 1 handful
  • Garlic : 3-4 cloves chopped
  • Ginger : 1 tbsp very finely chopped
  • Salt to taste 
  • Vegetable oil/olive oil : 1 tsp


Procedure :

1) Cut all vegetables into small cubes.
2) Clean and wash masoor dal .
3) Take a pressure cooker and put all ingredients .Pressure cook for 2-3 whistles.

     Serve hot.

Matar Dal In Bengali Style

Ingredients:


  • Yellow Split peas / matar dal : 1 cup
  • Cumin seeds : 1 tsp
  • Garlic : 2-3 cloves minced
  • Onion : 3-4 tbsp finely chopped
  • Green chilies : 3-4 slit
  • Salt to taste 
  • Sugar to taste(optional)
  • Garam masala powder : 1/4 tsp
  • Ghee to sprinkle
  • Vegetable oil : 1-2 tbsp


Procedure :

1) Wash and cook 1 cup of matar dal in the pressure cooker 
     with little turmeric and 2 cups of water.
2) In a deep bottomed pan heat oil and temper with cumin   
    seeds ,garlic minced. When the spices splutter add 
    chopped onion and green chillies.
3) Fry till the onion turns a nice pink and is softened.
4) Add the cooked dal and mix well.
5) Add salt and desired amount of water if reqiured. Let the  
    dal come to a boil.
6) Add a little ghee and garam masala powder ,mix well and 
    turn off the heat.
 

   Serve hot with steam rice.

Macher Matha Diye Moong Dal / Moong Dal With Fish Head

Ingredients:


  • Yellow Moong Dal : 1/2 cup
  • Katla or Rohu Fish Head : 4-5 small piece.
  • Ginger  paste : 1 tsp
  • Bay leaf : 1 medium
  • Cumin seeds : 1/2 tsp
  • Dry red chili : 1 broken
  • Turmeric powder: 1 tsp
  • Red chili powder: 1/2 tsp
  • Cumin powder: 1/2 tsp
  • Garam masala : 1/2 tsp
  • Salt to taste.
  • Mustard oil for cookig.
  • Few drops of ghee.


Procedure :

1) Wash and clean the fish head pieces, sprinkle some turmeric powder
     and salt on them and mix well.
2) Now add some mustard oil in a karai and fry the fish head pieces till
    all the sides fried properly and keep it aside.
3) First dry roast the dal  for few mints, then boil the dal in a pressure
    cooker with fried fish head. Keep it aside.
4) In a pan heat oil ,then add bay leaf, dry red chili , cumin seeds.Wait
    for few seconds.
5) Now add ginger paste, red chili powder, turmeric powder,cumin
    powder.cook for a minute in medium heat. 
6) Now add the boiled dal , some salt and sugar(while frying fish we
    already added some  salt so don’t add too much of salt). Cook for
    5- 8 minutes with a lid.
7) Now add the garam masala powder and some ghee and mix well
     and turn off the heat. 
     Serve hot with steam rice.

Beuli r Dal / Urad ka Dal in Bengali Style

Ingredients:


  • Urad dal/ beuli r dal : 1 cup roasted (1cup dal=3 cups water)
  • Mouri / fennel seeds : 1 tsp
  • Bay leaf : 1 medium
  • Green chilies : 2-3 
  • Ginger paste : 1/2 tsp
  • Salt to taste
  • Turmeric powder : 1/2 tsp
  • Sugar to taste
  • Vegetable oil : 1 tbsp


Procedure :

1) Wash and soak the lentil (Urad dal) for 1 hour.  Pressure cook the
     urad dal with turmeric powder for 10 mins (2 whistles) or boil the
     dal till it is soft.  Keep aside.

2)  In a pan, heat oil, add the bay leaf, green chillies and Saunf/Fennel
     seeds.  Stir fry till the seeds start crackling.

3)  Add the boiled dal and mix.  Add sugar, salt and ginger paste.
     Stir occasionally and cook the dal till your desired consistency.

     Serve hot with steam rice and aloo posto.

Sabji Diye Moong Dal / Moong Dal with Vegetables

Sabji diye moong dal
Preperation Time : 20-30 minutes
Cooking Time: 15-20 minutes
Serves :6-7

Ingredients :


  • Moong dal / yellow split moong lentils : 1 cup soaked in water
  • Carrots : 1/2 cup very finely chopped
  • Green peas : 1/2 cup
  • Cauliflower : 1/2 cup cut into very small pieces
  • Bay leaf : 1 small
  • Panch phoron : 1/4 tsp
  • Dry red chili : 1
  • Green chilies : 2-3
  • Salt to taste
  • Turmeric powder : 1/4 tsp
  • Sugar : 1 tbsp
  • Vegetable oil : 1 tbsp
  • Ghee : 1 tsp


Procedure :

1) Wash and soak raw moong dal in water for 10-15 minutes.
2) Then pressure cook it with 2 and 1/2 cup of water and cook till
    dal is tender. (2 whistles).You can also boil dal in a pan by
    covering the lid on low heat and cook for 25-30 minutes.
3) In a pan heat 1 tbsp of oil and add a red chili, bay leaf, panch
    phoron and green chilies and wait for few seconds.
4) Now add vegetables and fry for 2 minutes in medium heat.
5) Now add salt and turmeric powder. Cover with lid and cook
    for another 9-10 minutes in medium heat till vegetables
    become soft.
6) Now pour boiled dal and cook for another 3-4 minutes in
      medium-high heat.
7) Add sugar and mix it well.
8) Add a tea spoon of ghee mix it with dal and turn off the heat.
    Serve hot with steam rice.

Bengali Style Masoor Dal / Bengali Style Red Lentil Dal

Preparation Time : 15 minutes
Cooking Time : 20-25 minutes
Serves :4-5

Ingredients :


  • Masoor Dal / red lentil dal : 1cup
  • Onion : 1 very small finely chopped
  • Garlic Cloves : 2-3 finely chopped
  • Green chilies :3-4 slited
  • Panch phoron : 1tsp
  • Salt to taste
  • Turmeric powder : 1/4 tsp
  • Mustard oil : 1 tbsp
  • Sugar : 1 tsp (Optional)


Procedure :

1) Wash and soak masoor dal for 15 minutes.
2) Take a pan and boil 1 cup Masur Dal with 2 and ½ cups of water,
     a pinch of turmeric and chopped garlic. Boil until dal is fully
     cooked. Pour it in a bowl.
3) Heat oil in the same pan, add green chilies and panch phoron.
    Wait for few seconds.
4) Now add chopped onion and fry till its colour changes to golden
    brown.
5) Add boiled dal and mix well.
6) Add salt, sugar and a cup of boiling water. (If you feel you need
    to add more water do so.) Cook till you hear a nice bubbling sound.
    Stir infrequently during this process.
7) Continue cook till the thickness of the dal is according to your liking.
     Garnish with chopped coriander leaves.

Chola-r Dal/ Bengali Style Chana Dal


Ingredients:

  • chana dal : 1 cup
  • bay leaves : 2-3
  • dry red chilli : 2-3
  • cinnamon/dalchini :1"
  • cloves/laung :3-4
  • green cardamoms/ elaichi : 3-4
  • cumin powder :1/2 tsp
  • ginger paste :1 tsp
  • turmeric powder : 1/4 tsp
  • salt to taste
  • sugar:1 tbsp
  • kismis/raisins: 1tbsp
  • cashew: 1 tbsp
  • ghee/clarified butter: 1 tbsp
  • vegetable oil/canola oil: 1 tbsp
  • water:2 cups

Procedure:
1)  Rinse the dal well and soak the dal for an hour in water.

2)  Add the soaked chana dal and 2 cups water in the pressure cooker
     on a medium to high flame pressure cook the dal for 4-5 whistles.
     The grains should be separate and yet cooked thoroughly.

3)  In a pan heat oil.Then first add all the whole spices -
     bay leaf, cinnamon, cloves, cardamom and dry red chilies.
     Fry till they become aromatic. this takes some seconds.

4)  Now add ginger paste, cumin powder, turmeric powder, and salt.
     Fry them till oil seperates from masala.

5)  Pour the boiled dal on the fried masala.

6)  Now add sugar, raisins, cashews.
     Let it boil for 4-5 minutes in high heat.

7)  Now simmer the heat and add ghee.
     Mix them well. cook for a minute or 2.

8)  Turn off the heat.

     Serve cholar dal with luchi, bengali peas kachori
     and even steamed rice if you prefer.

Notes:

 If the cholar dal becomes thick after its pressure cooked, then add some
 water to thin it.The consistency of the dal can always be adjusted by adding
 less or more water after its cooked.You can keep the consistency thin or
 thick , as per your choice.

Bengali Mango Dal /Tok dal

Preparation Time : 20 -25 minutes
Cooking Time : 20-25 minutes
Serves : 5-6


Ingredients :

  •  Kacha Aam / Raw Mango : 1 small ,cut into cubes
  •  Masoor Dal : 1 cup
  •  Turmeric powder: 1/4 tsp
  •  Sugar: 1 tsp
  •  Panch phoron : 1/4 tsp
  •  Green chillies : 2-3 
  •  Salt to taste
  •  Water : 2 cups
  • Vegetable oil/ mustard oil


Procedure :


1. First wash the dal till water runs clear. Soak it in water for about
    15 minutes.

2. Now add dal in pressure cooker with 2 cups water .(pressure cooker:
    1 whistle on high heat and immediately switch off the gas and remove
    from hot surface. If you are using pan to boil dal cook dal till 80%
    boiled,not fully cooked).  Open the cooker, once the pressure lets
    off completely.

3. Wash and peel raw mango and cut it into cubes and keep aside.

4. Now heat 2 tsp of oil in a pan and add panch phoron and green chilies.
   Once it start spluttering add mango cubes.Stir it well.

5. Add salt and turmeric powder and mix them well.

6. Now cover with lid in medium heat for 5-6 mins and cook till almost done.

7. Now pour dal in pan over mangoes and add sugar if you like in high heat.

8. Cook dal for another 5 mins till it comes to boil.Now take it off from heat.

Serve hot with steamed rice and any veggie for your choice.

Notes:   Taste and adjust the sugar to your liking.
