Masoor Dal-er Khichudi

Preparation Time : 20-25 minutes
Cooking Time : 20 -25 minutes

Ingredients:
  • Gobindo bhog rice : 1 cup
  • Masoor Dal : 1/2 cup
  • Onion : 1/4 cup very thinly sliced
  • Garlic : 4-5 chopped
  • Bay leaf : 2 small
  • Panch phoron : 1/4 tsp
  • Dry whole red chili : 2-3 broken into half
  • Ginger paste : 1 tsp
  • Cumin powder : 1 tsp
  • Turmeric powder : 1/2 tsp
  • Salt to taste
  • Green chilies : 4-5 slited
  • Sugar :1 tsp
  • Garam masala powder : 1 tsp
  • Water :4 cups
  • Mustard oil : 4-5 tbsp
  • Ghee : 1 tsp


Procedure :

1) Clean and wash gobindo bhog rice and masoor dal . soak it in water for 1/2 hour.
2) Take a handi or heavy bottom vessel. Heat oil and then temper it with tejpatta/
     bay leaf ,dry red chili and panch phoron,
3) Now add thinly sliced onion and saute it for 1-2 minutes.Don't let its colour
    change.Don't over cook.
4) Add water. Cover the handi or pan with lid and let it boil.
5) Now when you see water just start boiling add soaked rice and dal.
6) Now add salt,turmeric powder,green chilies,cumin powder,ginger paste,garlic.
    Mix them well.
7) Cover and cook in medium heat till rice and dal is fully cooked .You can adjust
    thickness of khichdi by adding more or less water.
8) Now add sugar and sprinkle garam masala powder . Mix them well and cook for
    2 minutes.
9) Add ghee. Mix it.

   Serve khichdi hot.

Basil Egg Fried Rice

Preparation Time : 15 minutes
Cooking Time : 15 minutes

Ingredients :
  • Basmati Rice : 2-3  cups cooked and chiled
  • Capsicum : 1/2 cup thinly sliced
  • Egg : 2 
  • Oyster sauce : 2 tbsp
  • Soya sauce :1 tbsp
  • Fish sauce : 2 tbsp
  • Sugar : 1tsp
  • Garlic : 4-5 cloves finely chopped
  • Green chilies : 3 finely chopped
  • Onion : 1/2 cup chopped
  • Basil leaves : 1/2 cup
  • Vegetable oil/ olive oil : 3-4 tbsp
  • Cilantro : 1/4 cup 


Procedure:

1) Take a small bowl and put oyster sauce ,fish sauce ,soya sauce and sugar.Whisk
     them together and keep aside.
2) In a large frying pan heat oil over medium-high heat.
3) Add chopped garlic and green chilies and stir fry for 30 seconds.
4) Add sliced capsicum and onion and stir fry until the onion is translucent.
5) Push all fried veges in the pan aside and make scramble egg.
6) Now add the oyster sauce mixture and mix everything well.
7) Raise the heat to high and add the rice. Mix them well with the sauce and other
     ingredients.
8) When everything mix alltogether add basil leaves ,mix them with rice.
     Turn off the heat.Garnish with cilantro.

      Serve hot with any chicken dishes.

Mixed Fried Rice

Preparation Time : 25-30 minutes
Cooking Time : 30-40 minutes

Ingredients :

  • Basmati rice : 2-3 cup cooked
  • Carrot : 1/4 th cup
  • Peas : 1/4 th cup
  • Spring onions : 1 tbsp finely chopped
  • Onions : 1/4 th cup finely chopped
  • Egg : 1 large scrambled
  • Boneless chicken : 1/2 cup and cut into small cubes
  • Prawn/ shrimp : 1/2 cup small
  • Ginger : 1 tbsp grated
  • Garlic : 1 tbsp grated
  • Soya sauce : 2 tbsp
  • Green chilies : 1-2 tbsp finely chopped
  • Salt to taste
  • Sugar : 1/2 tsp
  • Vegetable oil / olive oil :7-8 tbsp


Procedure :

1) Wash rice and soak for 30 minutes in water.First you prepare rice  like  it is
     normally done or you can also use left over rice.
2) Spread it on plates under a fan so that the remaining moisture is vapourized
     and the rice becomes dry.
3) In a heavy bottom pan / kadai heat 2 tbsp oil on medium heat till it melts. Fry
     chicken cubes with little salt till chicken pieces becomes soft.Keep aside.
4) In the same pan add 2 tbsp oil heat it. Fry shrimp with pinch of salt.Cook them
    for 4-5 minutes in medium heat.Keep aside.
5) Now make scramble egg and keep aside.
6) In the same kadai add rest of the oil ,heat it.Add grated garlic and ginger.Stir it
    for a minutes.Then add carrots,green peas,chopped onions,spring onions and
    green chilies.Sprinkle salt.cook them till all the vegetables becomes soft.
7) Now add scramble egg,fried shrimp and fried chicken.Mix them well.Add
    soya sauce.
8) Now add cooked rice and mix it with chicken mixture.Add little sugar and stir
    it for 3-4 minutes.And now turn off the gas.
 
    Serve hot with any non vegeterian dishes.

Saffron Rice / Kesari Bhaat

Ingredients :


  • Basmati rice : 2 cups
  • Cumin seeds : 1/2 tsp
  • Saffron / kesar : 1/4 tsp soaked in 1/4 th cup of warm milk
  • Salt to taste
  • Sugar : 1 tbsp
  • Ghee : 2-3 tbsp


Procedure :

1) Wash rice and soak for 30 minutes in water.First you prepare rice
     like  it is normally done.
2) Spread it on plates under a fan so that the remaining moisture is
     vapourized and the rice becomes dry.
3) In a heavy bottom pan heat ghee on medium heat till it melts.
    Temper with whole cumin seeds. Add rice to it and fry it for
    2-3 minutes.
4) Add salt, sugar. Pour saffron soaked in  milk over the cooked
    rice and cover. Mix them well and cook for 4-5 minutes in
    medium-low heat.Let it stand for 10 minutes.
  Serve hot with Mutton curry, Chicken chaap.

Misti Polao

Ingredients :


  • Gobindobhog rice : 2 cups
  • Cashew nuts :10-12
  • Raisins : 14-15
  • Jeera powder : 1/2 tsp
  • Ginger paste : 1 tbsp
  • Yellow food color : 2-3 drops
  • Salt to taste
  • Garam masala powder : 1 tsp
  • Cloves : 4-5
  • Bay leaves : 2 medium
  • Sugar : 4-5 tbsp
  • Ghee : 4-5 tbsp
  • Warm water : 4 cups


Procedure :

1)  Wash and soak rice in water for 30 minutes.Drain the rice completely
      in a strainer after 30 minutes of soaking.
2)  In a bowl take soaked rice ,jeera powder,ginger paste,yellow food
     colour,salt ,cloves, garam masala and mix well.
3)  Heat a big heavy bottom vessel and add ghee.
4)  Tamper with bay leaves and then add rice. Cook in medium heat
     for 6-7 minutes .
5)  Add cashew nuts and raisins . Mix well.
6)  Mean while boil 4 cups of water in another pan .
7)  Add the boiling water to the rice.
8)  Bring heat to medium-low heat and cover the pan with lid and cook
     till big bubbles begin to form in 2-3 minutes.
9)  When the rice is 80% cooked, add sugar and cook till there is no
      visible water.
10) Turn the heat to low , do not open the lid and cook for another
       10 -12 minutes.
11) Now turn off the heat and fluff the rice with spoon and cover the
      pan for atleast 5-6 minutes.
      Serve hot with mutton kosha ,chicken curry or macher kalia.

Bengali Fried Rice

Cooking Time : 20-30 minutes

Ingredients:
  • Basmati rice / gobindo bhog rice : 2 cup cooked
  • Carrots : 1 medium carrot thinly sliced
  • Capcicum : 2 tbsp thinly sliced
  • Peas : 1/2 cup
  • Green chilies : 2-3 finely chopped
  • Ginger paste : 1 tbsp
  • Salt to taste
  • Ghee : 3 tbsp
  • Bay leaves : 1-2 medium
  • Cloves : 4-5
  • Sugar : 3-4 tbsp
  • garam masala powder : 1/2 tsp 
  • Cashew nuts : 1 tbsp
  • Raisin : 1 tbsp
Procedure :

1) Soak rice in water for atleast 30 minutes.First you prepare
     rice like it is normally done.
2) Spread it on plates under a fan so that the remaining moisture is
     vapourized and the rice becomes dry.
3) In a heavy bottom pan heat ghee and add bay leaves and cloves.
4) Add all the vegetables,chopped green chillies and fry them till
    they becomes soft.
5) Now add ginger paste and salt. fry them till ghee comes out.
6) Now add cashew nuts and raisins . Mix well.
7) Add garam masala powder and mix well.
8) Add sugar and cook till sugar melts.
9) Finally add rice and mix gently for another 2 mins .

  Serve hot with chicken curry,mutton kosha or any other non-veg dishes.

Vegetable Biriyani

Ingredients:


  • Basmati rice : 2 cups
  • Onion : 1 large thinly sliced
  • Ginger paste : 1tsp
  • Garlic paste : 1tsp
  • Green chili Paste :2-3
  • Tomato : 1 medium chopped
  • Kashmiri Red chili Powder : 1/4 tsp
  • Shan  Biriyani Masala : 2 tbsp
  • Mint leaves : 1 tbsp
  • Clilantro leaves: 3 tbsp
  • Cauli flower : 2 cups cut into big florets
  • Potato: 1 large cut into cubes
  • Peas : 1/2 cup
  • Beans : 1/2 cup cut length wise
  • Carrots : 1/2 cup cut into cubes
  • Yogurt : 1 cup
  • Ghee /clarified butter : 3-4 tbsp
  • Oil : 1-2 tbsp
  • Bay leaves: 2-3
  • Cardamom : 4-5
  • Cinamon : 1" 
  • Cloves/ laung : 4-5
  • Saffron : pinch
  • Salt to taste
  • Sugar :1 tbsp
  • Water : 4 and 1/2 cups
  • Milk : 2 tbsp


Procedure:
1)  Heat oil/ ghee in a heavy bottomed pan.
2)  Add sliced onion ,saute till nice and brown.Reserve half of the
     onions for garnish.
3)  In the same pan add ginger-garlic-chilli paste. Lightly fry
       for 2-3 minutes.
4)  Now add chopped tomato and fry till it becomes mushy and
      there is no raw smell.
5)   Add chili powder and biriyani masala with a sprinkle of water .
       Fry for 2 minutes.
6)   Add chopped mint leaves and cilantro leaves and mix.
7)   Add chopped vegetables and saute for another couple of minutes.
      You can also use frozen vegetables instead of fresh  ones.
8)   Now lower the heat and add 1 cup of beaten yogurt with salt.
       Mix well.
9)   Cover and cook for 8-10 minutes.
10) Remove masala from heat and put it in a deep microwave safe bowl.
11) Mean while wash rice and soak for 30 minutes.
12) In a pan add ghee/oil .Tamper with  bay leaves, cardamom,
      cinnamon, cloves.
13) Add the rice washed and drained.
14) Saute rice for 4-5 minutes at medium heat.
15) Now put rice over masala, mix gently.
16) Add water double the amount of rice. Add sugar and salt.
17) Heat few strands of saffron in milk and add that.
18) Now put in the microwave and select the option your
      microwave takes for rice.
19) keep stand for 5-6 minutes.

      Serve hot with raita.
