Bread Upma

Preparation time :5 minutes
Cooking Time : 10 minutes
Serves : 2

Ingredients :

  • Bread : 4 slices cut into very small cubes
  • Onion : 1/4 cup finely chopped
  • Green Chilies : 2 chopped
  • Curry leaves: 3-4
  • Red bell pepper : 2-3 tbsp finely chopped
  • Tomato : 2-3 tbsp Chopped
  • Black mustard : 1/8 tsp
  • Cumin seeds : 1/8 tsp
  • Tomato ketchup : 1 tbsp
  • Salt to taste
  • Olive oil : 1tbsp


Procedure :

1) First cut bread slices into small cubes and put it in a 
    bowl .Sprinkle 1 -2 tbsp of water over it.
2) In a pan add oil and heat it.
3) Then temper it with cumin seeds and mustard seeds.
     Wait for few seconds.
4) Add chopped onion ,green chilies and curry leaves.
    Saute for a minute in medium-high heat.
5) Now add other vegetables. You can add any 
    vegetables of your choice.Add salt.
6) Stir it for 4-5 minutes in medium heat till all 
    vegetables becomes soft.
7) Add ketchup and mix it with vegetables.
8) Add cube bread pieces and mix them well with
    vegetables. Cook for 2 minutes.Turn off the heat.

    Serve hot with tea.

Chicken in Coconut milk Gravy

Preparation Time : 10 minutes
Cooking Time : 45 minutes

Ingredients:
  • Chicken : 500 gm boneless, cut into medium pieces
  • Mustard seeds : 1/2 tsp
  • Cumin Seeds : 1/2 tsp
  • Dry whole red chili : 2-3 broken
  • Bay leaf :1 medium
  • Cinnamon stick : 1"
  • Onion : 1 cup finely chopped
  • Curry leaves : 4-5
  • Ginger paste : 1 & 1/2 tbsp
  • Garlic paste : 4 cloves
  • Green chili paste : 5-6
  • Corriander powder : 1tsp
  • Garam masala powder : 1 tsp
  • Kashmiri red chili powder : 1 tsp
  • Coconut milk : 1 can / 400 ml
  • Salt to taste
  • Vegetable oil : 4-5 tbsp
  • Cilantro leaves : 3 tbsp finely chopped


Procedure :

1) In a pan add oil and heat it. Temper it with mustard seeds,cumin seeds,dry whole
     red chili ,bay leaf and a cinnamon stick.
2) Add chopped onion, fry them 3-4 minutes in medium heat.
3) Now add curry leaves and fry it with onions for another 5 minutes in medium heat.
4) Add ginger paste,green chili paste,garlic paste and mix them well.Saute it for 2
     minutes.
5) Now add corriander powder .kashmiri red chili powder,garam masala powder and
    salt.Mix them well.Fry them for 5 minutes in medium heat.
6) Add coconut milk ,mix it well with masala.Don't add water.let it cook for 4 minutes.
7) Now add chicken pieces .Saute gently.Cover and cook for 20 minutes in medium
    heat. If the gravy tends to stick in bottom of the pan add very little water.Cook till
    chicken is fully cooked.
8) Add chopped cilantro and check seasoning.Cook for 2-3 minutes and turn off the
    heat.

Serve hot with paratha ,naan or steam rice.

Chirer Pulao / Simple Poha

Ingredients :


  • Raw Poha or Chire : thick 2 cups
  • Curry leaves : 5-6
  • Cumin seeds : 1/4 tsp
  • Mustard seeds : 1/4 tsp
  • Green chili : 1 chopped
  • Onion : 1/3 cup chopped
  • Peanut : 1/2 cup roasted
  • Potato : 1/2 cup chopped
  • Raisin : 10-12 pieces
  • Salt : as per taste
  • Sugar : as per taste
  • Turmeric powder : 1/3 teaspoon
  • Vegetable Oil : 2 tablespoon


Procedure:

1) Soaked poha in cold water for 5 minutes and after 5 minutes drain
    the poha .
2) Heat oil in a pan and add curry leaves,cumin seeds,mustard seeds.
    Fry for few seconds.
3) Now add peanuts,raisins and green chili.Mix well.
4) Add potato, onion,  salt and turmeric powder. Fry till potatoes and
    onion become tender.
5) Add sugar and mix well.
6) Now add the poha into the pan ,mix well and cook for 2-3 minutes .
   Serve hot with some ketchup.

Egg Curry With Curry Leaves

Ingredients:


  • Egg : 8
  • Onion : 1 cup finely sliced
  • Garlic : 4-5 cloves finely chopped
  • Curry leaves : 8-10
  • Green chilies : 4-5
  • Tomato : 1 medium finely chopped
  • Kashmiri red chili powder :1 tsp
  • Ginger paste : 1 tbsp
  • Turmeric powder : 1 tsp
  • Garam masala powder : 1/4 tsp
  • Salt to taste
  • Sugar : 1 tsp
  • Water : 1/2 cup
  • Vegetable oil/ canola oil : 3-4 tbsp


Procedure:

1) First boil eggs.Let them cool and cut into half length wise, handle
     very carefully so that egg yolk does not seperates from egg white
     and keep aside.

2) In a pan /kadai heat oil and put the curry leaves.

3) Then quicly add sliced onions and fry them till light brown colour
     comes out.

4) Now add chopped garlic and tomatoes and cook them in medium
     high heat till  tomato pieces becomes soft.

5) Now add green chilies,ginger paste,red chili powder,salt and turmeric
     powder,mix well . cook them covered till oil comes out from masala.

6) Put little water cook covered for another 5 minutes till the masala
     becomes soft.
8) Now add sugar and mix well.

7) Now put eggs very carefully in the gravy. yolk part of the egg should
     be in the top of the gravy.

8) Cook for another 5-6 minutes in medium heat.The gravy should be
     thick.

9) sprinkle garam masala powder ,mix softly  and turn off the heat.

    Serve with steamed rice or roti.
